Pink Party Squares

"Good for funerals to brighten the plate up!" That's what my mum has written on the top of this recipe card! We like them for other occasions too! They are light fluffy 'marshmallows' on top of tender melt-in-your-mouth shortbread. Very sweet! Cut with a wet knife and serve small portions.

Pink Party Squares

Bottom Layer:

1/2 cup butter, 2 Tablesppons brown sugar, and 1 cup of flour. Combine until crumbly and press into the bottom of a 9x9 pan. Bake at 350 degrees for about 10 minutes until lightly brown around the edges.


In a nice heavy saucepan combine: 1 cup white sugar, 1 envelope plus 1/4 teaspoon of plain gelatine and 1 cup of cold water. Stirring carefully, bring to a boil over medium heat. Stop stirring and boil for 10 minutes. Remove from heat and cool to room temperature. Transfer to bowl of electric mixer or use hand mixer for beating. Beat in 1 cup of icing sugar. Continue beating. When mixture thickens slightly, beat in 1 teaspoon of baking powder. Add 1/2 teaspoon almond flavoring and a few drops of red food colouring to desired shade of pink. Optional: add 1/2 cup of chopped drained marachino cherries. Pour gelatine mixture over bottom layer and refridgerate. Cut with a sharp wet knife into 36 pieces.
