Mama's Mystery Muffins


 These don't look like much, but they are yummy - the 'mystery' is that you never know just what kinds of jam will make their way into the middles - usually I use up those dribs and drabs of homemade jam that linger in their jars on the fridge door.  Enjoy!

 Mama's Mystery Muffins
 Preheat oven to 375 degree F.  Grease muffin tin - this make 9 muffins.
 1 1/2 cups unbleached all purpose flour 
1/3 cup white sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. sea salt
Combine dry ingredients.

1/4 cup melted butter - cooled
1 cup vanilla yogurt - we love Stonyfield Organic ( sour cream works well too)
1 beaten egg - room temperature
1/3 cup milk - room temperature
1 tsp. vanilla
Combine wet ingredients thoroughly. 

Jam assortment for the middles - about 9 teaspoons

Make a 'well' in the dry ingredients and pour in yogurt mixture. Stir just until all dry ingredients are moistened - do not over stir. Spoon half the batter into 9 greased muffin cups.  Place 1 tsp. of jam in the center of each muffin and top with the remaining batter covering jam completely so it doesn't ooze out.  Bake for 18 -20 minutes. Remove from muffin tin carefully and allow to cool. Serve mid-morning with tea and sliced fruit!

Certain children have burned their tongues on the hot jam in the middle of these light and tasty muffins because they were too impatient to wait for them to cool! Storyteller dubbed them 'Mama's Mystery Muffins' because he loves discovering which flavor of jam is hidden inside.

Similar to 'Muffins That Taste Like Donuts', but with a nicer texture and less fuss!!
